  • ⅓ small tomato, diced

  • 2 tablespoons red onion, finely diced

  • 1 slice wholegrain or fortified sourdough bread, toasted

  • Salt and pepper, to taste

  • Optional: 1 teaspoon extra virgin olive oil, for extra richness

  • Optional: ⅓ cup cooked spinach on the side (adds another 2mg iron)

Method:

  1. Tip the sardines and their oil into a small bowl and mash with a fork until broken up but still a little chunky (you want some texture here, not a paste).

  2. Stir through the lemon juice, parsley, tomato, and red onion until everything is well combined.

  3. Taste and season with salt and pepper, adjusting the lemon or salt to your liking. If you'd like a little extra richness, drizzle over a teaspoon of olive oil.

  4. Spoon the mixture generously onto your toasted sourdough. If you're adding the spinach, warm it through and serve it alongside for an extra iron boost.
