Super seedy crackers

These seedy crackers are simple, budget-friendly, and (bonus) they're one of the best snacks you can add to your day if you want to support healthy digestion.
Why Make Your Own?
Store-bought gluten-free crackers can be surprisingly expensive for what's essentially a handful of pantry staples pressed together and baked. When you make your own, you're paying for the raw ingredients rather than the packaging, marketing, and markup and a batch of these will cost you a fraction of what you'd spend buying the equivalent at the shops.
A Fibre Powerhouse
This isn't just a tasty, crunchy snack, it's also fantastic for keeping your gut happy. Between the chia seeds, flaxseeds, sesame seeds, sunflower seeds, and pepitas, these crackers are loaded with both soluble and insoluble fibre. That combination is exactly what your gut wants: it helps keep things regular, supports a healthy microbiome, and can make a real difference if you struggle with sluggish digestion. The Recipe
Makes 6–8
Ingredients:
2 tablespoons extra-virgin olive oil
1 level teaspoon salt
50g chia seeds
25g flaxseeds (linseeds)
50g pepitas
50g sesame seeds
50g sunflower seeds
2 tablespoons psyllium husk powder
125ml water
1 teaspoon dried herbs (basil, rosemary, thyme, or whatever you have on hand)
Method:
Preheat your oven to 160°C and line a baking tray with baking paper.
Combine all the ingredients into a bowl and give them a good mix. Let the mixture sit for 10–15 minutes so the seeds and psyllium husk can soak up the water and bind together.
Once it's thickened up, spread the mixture out thinly onto your lined baking tray.
Bake for around 20 minutes, keeping an eye on it until the crackers turn a lovely golden brown.
Let them cool completely before snapping into pieces. They're delicious on their own, alongside a meal, or scooped through a big dollop of hummus.
A Little Tip
These keep well in an airtight container for over a week, so it's worth doubling the batch if you've got the oven on anyway. Once you've made them a couple of times, you'll wonder why you ever paid for the boxed version.
